Spicy Sevai
This receipe is prepared from steamed rice flour pressed in form of noodle. Sevai can be made in various flavours such as tamarind, pepper, lemon, curd sevai depending upon the ingredients. Of all, my favourite is spicy sevai.
Lets check the ingredients to prepare spicy sevai.
To prepare Masala for sevai :
Onion - 1 Big
Tomato -2
Green chilli - 1
Ginger garlic paste
Green peas - 1/4 cup (steamed in cooker)
Garam masala - 1/4 tbs
Coriander powder - 1/4 tbs
Chilli powder - Pinch
Corriander leaves
Masala preparation
Take a pan or cooker. Add little oil, saute onion, green chillis and ginger garlic paste. Blend the cut tomatos and add it to onion mix. Add cooked green peas to the mixture followed by adding spices mentioned above. Saute the thing for a while. Add 1/4 cup of water and cook it for a while. Add a bit of salt to taste. (Dont add more salt as we will be adding salt to sevai as well)
Keep this masala aside.
Lets move on for the preparation of sevai.
Sevai
Rice - 11/2 cup
Hing - pinch
Oil - 1 tbsp
Sevai nazhi or murukku hand press
Sevai Preparation
Soak the rice for 3-4 hours.
With grinder or mixie grind the soaked rice to get the form of batter. Add water sufficiently to make it as smooth paste. Add 1/4 tbst of salt.
Pour the prepared batter into greased Idly plates (Use gingely oil for greasing the plate surface)
Steam Idly for 10-12 minutes (Dont cool the Idly as cooling make it difficult to press)
Add the cooked Idly to the murukku maker or Seva Naazhi and press it to get steaming noodles (Rice Sevai).
Add the masala prepared above to the sevai. Saute and mix it for a while so that all masala get adhered to Sevai. Add salt for your taste.
Garnish with corriander and serve hot with onion raitha or fryans (Vadam).
