Mint Pagnottine (Savory Buns)

I have tasted Pagonottine few times with my friend in Basilico (one of the Italian restaurant in Singapore). It is nothing but savory or kara Buns stuffed with Garlic,onion and spices. Somehow today, when my friend was talking about old memories to cherish upon, I tempted to eat Savory Buns.  As well, its raining badly here (Being a tropical country with quite unpredictable climate), thought of preparing Pagonottine from my  kitchen. I have modified the recipe little bit by adding coconut pieces and mint leaves to enhance the peculiar taste. The chunky bits of coconut infused with Mint added more flavour to kara bun. Sipping hot Chai & Pagnottine & greenary garden view from my window in raining season is a pure bliss. Try this simple Italian Buns and do comment on your reviews.



Ingredients :

All purpose Flour - 3/4 cup
Wheat flour - 1/2 cup
Instant Yeast - 3/4 tbsp
Fresh Milk - 1/4 cup
Olive Oil - 2 tbsp
Sugar - 1 tsp
Salt - 3/4 tsp
Chilli Flakes - 1 tbsp 
Green Chillis - 1 tsp (Finely chopped)
Garlic - 1 tbsp
Onion - 2 tbsp (Finely chopped)
Mint leaves - 2 tbsp (Finely chopped)
Oregano -1/2 tsp 
Coconut - 1 tbsp (Finely grated)
 
Method :

In a mixing bowl, Sieve and add All purpose flour & wheat flour. Heat the milk to luke warm. To the milk, add sugar and 1/4 cup of luke warm water. To this add Instant Yeast and mix it till Yeast get dissolved completely.

If you are new to baking, you can do Yeast proofing to ensure Yeast is active. To this Yeast- Flour mixture, add olive oil, Chopped onion, mint leaves, garlic, Oregano, Grated coconut, Chilli flakes, salt and a pinch of sugar. Mix these contents and make it as soft pilable dough. Brush the dough with butter or oil and keep it cover using cling wrap. Let the dough get rise for 2 hours at warm place.

After 2 hours, the dough should have raised well. Knead the dough again and make small sized balls.Brush the buns with 1 tsp of Milk and softened butter. Arrange it in a baking tray, greased well with butter.

In the mean time preheat the oven to 190 degrees. Bake the buns for about 15-18 minutes till it become golden brown. Mine took 16 minutes to cook. Enjoy the Pagnottine with Hot tea.
