Aviyal

Aviyal is a lipsmacking creamy recipe cookied with all vegetables in coconut gravy. I always like to make it as gravy type, whereas my mom like to make it as dry. This recipe always come to my kitchen when sudden guests arrive. This can go well with Adai or rice.





Ingredients :


Raw Banana - 1 
Chena  kilangu (Yam) - 1/2 cup
Drumstick (Murunga Kaa) - 1 
Potato - 1/4 cup
Snake Gourd - 1/4 cup
Carrot -1/2 cup 
Beans - 1/4 cup
Peas - 1/4 cup
Green chillis -3 
Raw Mango - 1/2 slice 
Coconut - 1 cup
Yoghurt - 1 cup
Curry leaves 
Turmeric powder - 1 tsp
Cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Oil - 2 tbsp
Salt to taste

Method :

Chop all vegetables and pressure cook till the veggies are cooked. Dont make the veggies mushy. They should be slightly crunch to bite. Meanwhile grind the coconut, green chillis, cumin seeds, turmeric powder and keep it aside. Whisk 1 cup of yoghurt with this paste and stir it well.

In a pan, add 1tsp of oil (coconut oil is more preferable). Add the cooked vegetables and saute it for a while. Now add the ground coconut paste & 1/2 cup of water. Cook it under low flame for 5-6 mins. Adjust the salt according to the taste. Finally temper with mustard and garnish with curry leaves.

 Serve hot with rice or Adai.

  1. a little more solid would be gr8! for tht use the curd as a paste alone and not to stir well :)
