Coconut milk - Mint Briyani




        Its summer here. What will you do if you have lot of coconut at your home ? I like to drink tender coconut daily. But I dont want to waste the coconut flesh inside. I found this recipe in a cooking blog and adjusted the taste for my taste buds. This is similar to normal Briyani rice with all spices and vegetables. The flavour of mint and cooking of the rice in the coconut milk makes the recipe rich and tasty.




Ingredients :

Basmathi rice - 3/4 cup
Mint leaves - 1/2 bunch
Garam masala - 1 tbsp
Chilli powder - 1 tsp
Garlic - 6 cloves
Ginger - 1/2 inch
Coconut milk - 1 1/2 cup (thick extracted from 1/2 big coconut)
Oil - 2 tbsp
Ghee - 1 tbsp

Vegetables :

Onion - 2 big
Potato - 1/2 cup 
Carrot - 1/4 cup
Peas - 1/4 cup
Corn -1/4 cup
Mint leaves - 1/4 cup
Green chilli -3
Grated coconut - 2 tbsp 

Spices :

Bay leaf  - 1
Saunf - 1 tsp
Cinnamon - 1
Cloves -2
Star anise -1
Elachi -1

Method :

Soak the basmathi rice for 30 minutes and keep it aside. 

Make a fine paste of garlic, ginger, mint leaves, green chillis, 2 tbsp of grated coconut and 1 tbsp of Garam Masala powder.

In a pressure cooker, add oil and ghee, followed by adding all the spices mentioned above. Add the finely sliced onions & mint and saute it for a while till it turns translucent. Now add the fine paste of garlic-mint-coconut and saute till raw smell goes off.

Now add carrot, Corn ,peas and potato and mix it well. Then add thick coconut milk and 1/2 cup of water and mix it well with the vegetables. Once it started boiling, add the presoaked basmathi rice and cook it under medium flame for 12-15 minutes. (Or pressure cook for 2 whistles).Mix it with fork without making the rice mushy.


The ground masala with coconut milk and mint leaves gives a nice aroma !!!

Serve the briyani with Onion raitha or Mint raitha.
