Tamarind Avul upma
Avul upma ( flattened rice upma) is easily digestible and can be used to cook quick snack recipes. My mom used to make different forms of avul upmas such as pepper upma, velayichathu (avul with Jaggery and coconut) and tamarind avul, Among all my evergreen favourite is tamarind avul. Here would like to give you the quick recipe.
Avul (Flattened rice flakes or poha) - 1 1/2 cup
Tamarind - small lemon size
Mustard seeds - 1/4 tsp
Urad dhal - 1/2 tsp
Peanuts - 1/4 cup
Red chilli - 2
Channa dhal - 1/2 tsp
Hing - a pinch
Tumeric powder - 1/4 tsp
Oil - 3 tbsp
salt to taste
Soak avul for 1-2 minutes in a bowl and drain out the excess water(don't soak it for long time as avul become sticky).
Squeeze the tamarind and add the tamarind extract to the soaked avul.
Heat oil in a pan and splutter mustard seeds, urad dhal, channa dhal, red chillis and peanuts,
now add the soaked avul into the pan and mix it well by adding a pinch of hing and cook it under low flame for 2-3 minutes.
Now Avul upma is ready, garnish with curry leaves and enjoy tasting tamarind avul upma.
