Thenga (Coconut) thogayal

This is my mom's favorite dish. Whenever she prepare vatha kolambu, always this recipe will come together. This is very simple dish and can be ready in 10 minutes. This tastes heavenly with hot rice and a tsp of ghee.



Ingredients :

Grated coconut - 1/2 cup
Whole urad dal - 2 tsp
Garlic - 3 to 4 cloves
Red chilli - 2 to 3
Tamarind - small lemon sized
Peanuts (optional) - 2 tsp
Hing - a pinch
Ginger (grated) - 1/4 tsp
Mustard seeds - 1/4 tsp
Curry leaves 
Salt 
Oil - 2 tsp

Method :

Heat oil in a kadai, add garlic cloves, ginger,red chilli and urad dal. Roast it till it gets golden brown. Add hing and tamarind, saute it for a while, add the grated coconut and fry it for a few seconds.

Transfer the contents to a mixer,  sprinkle some water and grind it to a coarse paste. Add enough salt according to the taste.

Temper with mustard seeds and curry leaves. Serve with hot rice topped with ghee or gingely oil.
