Coconut is a divine gift from nature. As my father say, its a Kalpa Vriska (Meaning that tree supplies all need for life). Yes each and every part of coconut gives very nice cooking recipes as well good advantage to mankind. It has good antioxidant properties,fight against infections, stabilizes glucose in the body and helps for good digestion. I usually add ginger in almost all of my recipes. Ginger with the combination of coconut aids for good digestion and ofcourse ginger cures gastric problem. Among all quick cooking recipes, I prefer to coconut rice. Its very easy to cook and can go well with all tangy curries. Lets go for our today's quick cooking recipe. Coconut Rice.
Rice -1 1/4 cup
Mustard seeds - 1/2 tsp
Dry roasted Urad dhal - 2 tsp (Soak urad dhal and dry roast it)
Channa dhal - 1 tsp
Grated coconut - 1/2 cup
Hing - 1/4 tsp
Curry leaves - 1 spring
Ginger (Finely chopped) - 1 tsp
Green chilli - 1 to 2 (depends on taste)
Cashew - 3 to 5
Oil - 2 tsp
Salt to taste
Soak rice for 10 mins before cooking. I prefer to soak because it helps to cook such a way that the grains are separated. You can use either basamathi or normal rice. Cook the rice with a pinch of salt and 1/4 spoon of ghee.
In a pan, add oil / ghee. Roast cashews till it turn brown.Keep it aside.
In another pan, add oil. Splutter mustard seeds and channa dhal. . Now add ginger, green chilli, curry leaves and hing. Saute it for a few seconds. Now add the dry roasted urad dhal and give it a quick stir. Now add the roasted cashews and mix it properly. Finally add cooked rice and adjust salt according to taste.Serve hot with any gravy of your choice. I had it with More kolambu (Recipe coming soon).
