Lemon Rice

Lemon rice is simple quick lunch box recipe that can go well with More kolambu or raitha. The tanginess of lemon with the aroma of tempering agents gives delicious flavour. I believer everyone knows Lemon has excellent source of Vitamin C and cures common cold. But how many of us know that it strength the liver and soothe digestive system. My mom suggest me always to drink 1/4 cup of Ginger Juice squeezing lemon on top atleast once in  a week.  This will cure gastric problems & headache.But in these busy days, nobody get time to do all these. But we can still incorporate these into our cooking to have healthy life. Lets go the recipe. Lemon Rice.



Ingredients :

Rice - 1 cup
Lemon juice - 3 tbsp 
Mustard seeds - 1/4 tsp
Channa dhal - 1/2 tsp
Urad dhal - 1/2 tsp
Peanuts - 1 tbsp
Green chillis -2
Ginger - 3/4 tsp (Grated)
Turmeric powder - 3/4 tsp
Hing - 1/4 tsp
Curry leaves - 1 spring
Gingelly oil (Sesame oil)- 2 tbsp
Salt to taste

Method :

Soak rice for 20-30 minutes. You can use either Basmathi rice or normal one. Cook it for 3 whistles. Allow it to cool by spreading in a wide plate. Keep it aside.

In a pan, add gingelly oil, splutter mustard seeds. Now add urad dhal, channa dhal and peanuts. Fry till it becomes golden brown. (Dont let it to burn).

Now add chopped green chillis, grated ginger, curry leaves and Hing. Finally add turmeric powder and adjust the salt. Switch off the flame. Now add this to the rice and mix it well. Finally add the lemon juice and mix it gently.  Adjust the salt if need.

Serve hot with Mor kolambu or onion raitha.
