Tomato Mint Chutney

This chutney is dedicated for those mint lovers like me. As everyone knows Mint adds special zing to the recipe when added. Also it helps to relieve indigestion and good to cure acne prone skin. It is also a perfect mouth refreshing agent that fight against oral infections. I am not sure how many girls /women know that Mint has anti spasmodic effect (especially to rid of menstrual cramps and pain). As well for pregnant women its beats away the morning sickness. It also helps to relieve stress and rejuvenate the mind. Thinking all these points in mind, lets go for yummy chutney recipe. This recipe will be bit different if you are bored with usual tomato / onion chutney. Lets check out today's recipe.




Ingredients :

Tomato - 3 big
Mint leaves - 3/4 cup
Ginger - 1 inch piece
Garlic - 2 (Crushed)
Red chillis - 2 (Depends on taste)
Tamarind - a small lemon sized 
Hing - 1/2 tsp
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Curry leaves - 1 spring
Oil - 2 tbsp
Salt to taste

Method :

In a pan, add oil, followed by adding urad dhal and red chilli. Saute it till urad dhal become golden brown. Remove it from the pan and keep it aside. In the mean time, wash the pudina leaves and keep it ready. Now in the same pan, add 1 tsp of oil, followed by adding chopped tomatoes, Garlic, ginger and tamarind. Once the raw smell of tomato disappear and become soft, add the washed mint leaves and hing. Saute till the leaves become soft. Switch off the flame. Allow the contents to cool.

Now in a mixie, put the tomato- Mint mixture, roasted urad dhal and salt.  Grind everything to a smooth paste. Temper it with Mustard and urad dhal. 

Serve it with Hot idly/ chutney. You can top up a spoonful of gingelly oil before serving. Flavourful, healthy Tomato-Mint chutney is ready to serve.
