Semiya Briyani (Vermicelli Briyani )

Whenever you prefer to cook one pot meal definitely rice will be dominant in that. For a change, I tried one pot meal with Vermicelli (Commonly known as Semiya). I usually cook either Tomato semiya or Lemon Semiya for breakfast / Dinner. This recipe is pretty similar except with the additon of coconut milk and mint together with vegetables. In vermicelli you can prepare different recipes such as Tomato vermicelli bath and Methi vermicelli bath.(I have tried the latter, I will post the recipe soon). For today I will give you the recipe to prepare Vermicelli Briyani. Lets go to the recipe.





Ingredients :

Vermicelli - 1 cup
Mixed cut vegetables (Carrot, beans, corn and peas) - 3/4 cup 
Onion - 1 Big (Sliced)
Tomato - 1 (Small)
Green chilli -2
Garlic - 3-4 cloves
Ginger - 1 tsp (chopped)
Mint leaves - 3-4 spring (around 12-15 leaves)
Cilantro - 2 tbsp (Chopped)
Coconut milk (take 2nd and 3rd milk) - 1 cup
Fennel seeds - 1/2 tsp
Pepper powder - 1/2 tsp
Bay leaf - 1
Jeera - 1/2 tsp
Cinnamon stick - 1
Clove -2
Cardamom - 1
Oil /Ghee - 2 tbsp
Salt to taste

Method :

In a pan, add 1 tsp of Ghee. Roast the vermicelli to golden brown. If you are using pre roasted vermicelli, you can skip this step.

In a mixie, grind garlic, ginger, green chilli, MInt leaves, cloves, cardamom and fennel seeds. Make it as smooth paste by adding little water. Keep this masala aside. (You can add Garam Masala powder instead adding individual spices).

In another pan, add ghee/oil. Add Bay leaf and jeera. Fry it for a while. Now add onion and Saute till it become transparent followed by adding the grinded ground masala. Saute till the raw smell goes off. Now add the mixed vegetables and fry it for 2-3 minutes. Finally add coconut milk (around 2 cups of thin milk) and pepper powder. Add required salt and bring it to boil. Once its done, add roasted vermicelli Let it boil completely till the coconut milk gets absorbed by vermicelli completely. Keep it covered and cook it in low medium flame for another 3-5 minutes.(Dont let it overcooked, as it will turn gooey). Garnish with Cilantro.

Serve hot with raitha or pickle. Enjoy your meal !!
